I am trying the double weave a small cotton blanket with hemstitched ends. Any advice on how to do the hem stitching?

Hope you got this figured out in some way. I recall seeing somewhere else on the JST sight that Jane said she doesn't do a hemstitch with making a double weave. What did work for me, to help keep the threads stable until I could do the tassels, was to weave a waste yarn, 4-5 picks to stabilize the ends, and easy to cut out once ready to finish with tassels or sew.
